Two Friends, One Coffee Order, and the Snack Drawer We Couldn't Fix
The truth about what's in most "healthy" snacks — and why we started making our own.
We've been getting coffee together for years now. Same order, more or less, most weeks. And most weeks, the conversation would drift to the same place: why is it so hard to find a healthy protein filled snack bar that doesn't need a decoder ring to understand?
We'd both walk in with whatever we'd grabbed that morning — a granola bar, a protein bar, something that looked reasonable on the front of the package. Then we'd flip it over. Modified this, isolate that, three kinds of sugar under three different names. Neither of us could tell you what half of it actually was.
One of those afternoon coffee sessions, one of us said something like: Have you tried dates filled with hazelnuts or walnuts? That tastes delicious. When did snacks get this complicated in a package?
It wasn't a big moment. It was just a question we kept coming back to. The more we looked, the more it held up. Snacks marketed as "clean" that weren't. Ingredient lists long enough to need their own footnotes. Products charging a premium for the appearance of health, without much of the substance.
We started caring about this for a simple reason: we care about people, and about what people actually put in their bodies without realizing it. That's not a slogan for us — it's the reason Neobar exists at all.
So we started keeping it simple, on purpose. Every Neobar is built from dried fruit, nuts, rice protein, and chickpea flour — ingredients you could name yourself, in an order you could explain to a kid. No preservatives, because real dried fruit and nuts don't need them when they're handled properly. No added or refined sugar, because dates already do that work. Nothing you'd need a chemistry background to read.
We're not trying to reinvent snacking. We're trying to make it make sense again as the way it did before ingredient lists got long enough to hide things in.
Why we're telling you this first
This is our first post on this site, and we wanted to start here instead of with a product launch or a discount code, because the "why" matters more to us than the sell. We're building Neobar as something people shape with us, not something we hand down from a boardroom — so if you've got a flavor idea, a question about what's actually in the bars, or just want to tell us we got something wrong, we want to hear it.
This is the story of simplicity and a health-conscious approach to life.
